And today I decided to pickle some pretty purple cauliflower as I had been given two of them and wanted to do something with them before they went off.
All you need to do is cut and wash the cauliflower, then dry off with some kitchen paper before placing in a preserving jar, with salt and spices, which can either be pickling spices or an assortment of your own, add the spices to the bottom of the jar with the salt and then start stacking the cauliflower tightly into the jar until you reach the top then fill with vinegar, clamp the lid on and leave in a dark place for a couple of weeks until ready.
This is delicious served with sandwiches or salad.
This is the cauliflower after one day and its turned the white vinegar a beautiful pink colour.

Vi, haven't been to your blog in a long while. I love pickles:) Yours looks so good. I have never seen pink cauliflower before, so I thought it was just a regular white cauliflower and you added some beets to the jar for the color:) Great post!
